Connecticut Requirements

The Connecticut Department of Energy and Environmental Protection (DEEP) requires that food service establishments (FSEs) limit the amount of fats, oils and grease (FOG) entering the municipal sewer system by installing either an outside grease trap/interceptor, an active grease recovery unit (AGRU) or super-capacity grease interceptor (SCGI).

Super-capacity grease interceptors are third-party certified to retain more than four times the amount of grease (in pounds) than the flow rating in gallons per minute (GPM). The interceptor must be designed to separate FOG from wastewater while allowing water to flow through, and must also meet specs defined in section 5(b)(3) of the DEEP general permit.
